Egg noodles are a popular fast food. Here’s how to make your own egg noodles at home. Has a vegetarian version.

To make egg noodles, boil hakka noodles, then add scrambled eggs, tempered vegetables, sauce, and spices. Egg Noodles are a healthy dish that can be enjoyed for lunch, dinner, or as an addition to a grand meal.

Because of their ease and deliciousness, egg noodles are my favorite dish. The Egg Noodles Recipe is a great choice for beginners and bachelors.


Instant Egg Noodles are quick to prepare. You can either add egg to the Instant Maggi Noodles or use Hakka noodles (recipe here). The Instant version has a masala-loaded noodle version, but the Hakka Egg Noodle version can be made with any sauces, spices, or vegetables you prefer.

The Instant version can be made in just 3-5 minutes, while the Hakka Noodles can be made in 15 minutes. This is due to the time required to prepare noodles separately, cook eggs separately, and temper vegetables before sauteing them all together with sauces.


You can make Egg Noodles in many different ways by changing the sauce and spice levels. In this post, I’ve presented both the regular and the Schezwan versions of Egg Noodles. The Schezwan version is made with Schezwan Sauce. This makes Egg Noodles more spicy and hot. Both versions of egg noodles taste amazing and are worth trying at home.


  • Hakka noodles: Hakka noodles are available at supermarkets, grocery stores, and online. To ensure they don’t get overcooked while being sauteed with vegetables, cook them either parboiled (half-cooked) or aldente (cooking firm until you feel their bite with your tooth). You can get them in packs of 3-4 so your family can enjoy them or that they are handy for busy days. Even supermarkets sell wheat hakka noodles.
  • Eggs and Veggies: Brown/White / Country eggs are perfect for making Egg Noodles. I’ve used vegetables such as carrots, capsicum, and cabbage. Other veggies I suggest are cauliflower, broccoli, and mushrooms.
  • Sauce: I used both Soy sauce and Chilli Sauce, which are available at grocery stores. As an alternative to chili sauce, you can use chilli oil. I’ve tried Schezwan Chutney and Schezwan Sauce for Schezwan.
  • Oil: Hakka noodles taste best when made with olive oil. It isn’t a compromise to use sesame or refined oil.

Although I will eat noodles occasionally, my husband loves egg noodles. He enjoys most Chinese foods, but egg noodles are his favorite.


1. Boil 4 cups of water with salt and oil.

2. Add 150 gms of hakka noodles. I cut the noodles in half and then added them.

3. Cook the noodles until they are slightly soft but not too soft.

4. It should be cooked aldente. It was delicious! I cooked it for five minutes, and it was perfectly done.

5. Drain water.

6. Rinse the mixture with cold water to get rid of any starch.

To avoid sticking, add a little oil to the mixture and toss it.

8. Heat oil in wok and add 3 eggs, salt, and pepper.

9. Scramble well. Transfer the mixture to a plate.

To a large skillet, add 2 teaspoons garlic chopped finely and 1 teaspoon spring onion white portion. Sauté for 2 minutes.

1. Add 1/4 cup chopped onion, 1/2 cup carrots, 1/2 cup capsicums, and 3/4 cup cabbage.

12. Saute the vegetables for 2 minutes on medium heat.

13. Keep the heat on high. Add 1/2 tsp of soya sauce and 1/2 tsp green chili sauce, 1/2 teaspoon red chilli sauce, and 1/2 tsp chilli sauce to the mixture. Season with 1/2 tsp pepper, 1/2 Tsp vinegar, and any salt you desire. If you wish, you can add 1/2 teaspoon of sugar.

14. Give the vegetables a quick stir to coat them with sauces.

15. Add cooked noodles to the bowl with 1 tbsp of spring onions green part.

Mix it well. Mixing it with 2 laddles was easy.

17. Cover the wok with a heavy pan. You will need to be careful with heavy woks.

18. Now add scrambled eggs.

19. Toss well.


  • I didn’t have spring onions, so I skipped it. The white part of the spring onion should be added along with the garlic and green parts. It has a pleasant flavour, so make sure to use it.
  • By adding more sauces to the noodles and a little less water, you can make them more saucy.
  • To prevent noodles from sticking together once they are cooked, add oil to the boiling water.
  • Don’t overcook the vegetables after they are added. They will be very soft. You want the veggies to be crisp and not soft.


  • For chicken noodles, add small pieces of chicken.
  • For soup lovers, cook to a soupy consistency.
  • To make it hot and spicy, you can add different sauces.
  • Masala egg noodles can be made by adding maggie magic masala, or topping ramen masala.
